Red, White and Blue Dessert

Whip up these red, white and blue treats for the long weekend. Keep this recipe handy for the 4th of July.




Ingredients: 
1 lb Strawberries
1 Carton Blueberries
1 Tub of Philadelphia Cheesecake or Homemade Cheesecake
1 Wilton Piping Bag
1 Wilton 32 Icing Tip

Step 1) Wash the Strawberries and pat dry




Step 2) Cut the tops off the berries, don't cut too far




Step 3) Place the berry flat on a cutting board, cut an X in the top of the berry, do not go all the way down




Step 4) Place tip inside piping bag and fill a piping bag with cheesecake




Step 5) Put icing tip inside X cut into the strawberry, start piping cheesecake moving upwards




Step 6) Finish with a blueberry on top of cheesecake




Step 7) Enjoy!

Why I'm Supporting Alamo City Pit Bull Rescue

I am supporting Alamo City Pit Bull Rescue and Rehabilitation today during the BigGiveSA. Ive witnessed how ACPBRR has helped countless pit bulls in the San Antonio area.




These amazing dogs come to ACPBRR broken, abused and neglected. Fosters lovingly nurse these sweet dogs back to health and teach them how to live in a household. ACPBRR covers all medical costs which add up fast.

Nautical Cupcakes

Back in March my friend had an amazing nautical bachelorette party. Tasked with bringing dessert I searched for the perfect themed cupcake. These beauties may look difficult but are really super easy to make.





You will need:
1 bag Navy Candy Melts
White Icing of Choice
White Cupcakes, either from scratch or from a box
Blue Food Coloring Gel
2 Small Icing Bags
1 Large Icing Bag
Wilton Icing Tip #32 
Cupcake liners (I ordered mine on Etsy)
Wax Paper
Clear sugar crystals


Start by printing out the anchors to use as a pattern. Place pattern on a tray and cover with wax paper. I googled "anchor outlines" and searched until I found one I liked. Melt candy melts as directed on the package. Pour melted candies into a Wilton plastic squeeze bottle and follow the patten. Place tray into the fridge to harden.




Make white cupcakes of choice. Dye half of your icing blue using blue coloring gel. I wish I would have made mine a little darker so be generous with the color. Place blue icing in a small icing bag and the remaining white icing in the other small icing bag. Take both bags and place them in the large icing bag with tip.




Ice cupcakes as normal. Both colors will come out and swirl naturally. I love that it looks like a little cloud.




Take anchors out of the fridge and peel them off the wax paper. Place on top of cupcakes and sprinkle with crystals.




Ta Da! Perfect little nautical cupcakes that matched the theme. We had a blast and munched on these all weekend.

My Extreme Escape Experience

Looking for some out-of-the-box fun? Look no further! Extreme Escape just opened in Northwest San Antonio.


Picture it, you walk into the room, the door shuts and a voice comes on the TV screen above. The mystery voice gives your group one clue before the clock starts ticking down. If you don't make it out of the room before one hour you become the undead. 


Extreme Escape offers four rooms to choose from, each with a different theme. Since my husband is a Walking Dead fan I picked the Undead Room.

The theme of the Undead Room is that you and your team are trying to survive the zombie apocalypse. You hear of a doctor that may have an antidote that could stop the infection and save humanity. The room is set as the bunker where the doctor was last located. You must get in, secure the location and find the antidote.

My friends and I had a blast! We made it out of the room with 22 minutes to spare, phew! We all worked together to find and solve the clues. The first few minutes were kinda hectic. We didn't know what to focus on or what to do. Once the first clue was found we moved quickly and got it done. 





I would definitely try another escape room at Extreme Escape. I have my eye on the Master of Illusion room.

Garlic And Herb Sweet Potato Fries

I was looking for a side for dinner and noticed I had two small sweet potatoes that needed to be used soon. BOOM. Sweet potato fries.


Ingredients:
1-2 Sweet Potatoes
2 tbsp. Olive Oil 
1/2 tsp. Sea Salt 
1/8 tsp. Pepper
3 tbsp. Parmesan Cheese  
2 tbsp. Fresh Italian or Dried Parsley 
1 Garlic Clove Minced 


Steps:
1) Preheat over to 450 degrees.

2) Line baking tray with parchment paper and set aside. 

3) Slice sweet potatoes, skin on, into 1/4 inch round slices. 




4) Cut the slices into 1/4 batons (fries). 




5) Place sweet potatoes on your baking sheet and toss with olive oil, salt and pepper until evenly coated. 




6) Place in the oven for 20-25 minutes or until golden brown and starting to crisp on the edges. Toss the fries once after 10 minutes. 


7) While the fries are cooking, mix the garlic, parmesan and parsley in a small bowl. 




8) Remove fries from oven and top with cheese, garlic and parsley mix.

Orange Peel Jello Shots

Got a tailgate coming up? Bring them what they really want, jello shots! These aren't your same old jello shots. These are made in an orange. Does that make them green? You could make them in your fruit, color of choice. 



Start by cutting your oranges in half. I took a knife and cut around the fruit until I could pull the fruit out of the peel with my hands.




Next mix 3 envelopes of Knox Brand Gelatine with 3oz of Jello powder. Slowly pour 3 cups of bowling water into the powder mix. Stir until gelatine is dissolved.

Once all the powder is dissolved pour in 2 cups of vodka and one cup of fresh OJ. I squished the orange fruit I just peeled for the juice. To see this process step-by-step go here.

Place your peels in a muffin pan so they don't roll around. Pour your mixture into the peels all the way to the top. Chill for at least 4 hours or overnight.




Slice peels into cute little bite size pieces. 




Enjoy the fruits of your labor and take fun, orange peel photos with your friends!

Celebrate Oktoberfest at the Bier Garten Riverwalk

I had the pleasure of visiting the Bier Garten on the Riverwalk yesterday to learn about their up coming Oktoberfest event full of sing-a-longs, stein holding, alp horn blowing contests, live German music, dancing and a keg tapped by a local celebrity.





The Bier Garten totally rolled out the red carpet for our visit. We dined on authentic Bavarian fare including sausages, pretzels, sour kraut balls and of course ice cold beers. BG has one of the largest selections of import and craft beer on the Riverwalk.




On Friday, Bier Garten is kicking off their Oktoberfest celebration with a HUGE launch party. This party is free to attend but I am giving away 2 (one person with a guest) VIP tickets that get you access to the buffet and bier. Yum!
