July 4th Peach Cobbler

I had Samantha from Green Eggs and Sam, Jordan from Elizabeth Grace Blog and Ashlei over this week for dinner but didn't have much time to cook by the time I got off work. I wanted to serve a quick but delicious dessert. 

Crock pot cobbler is so easy and can be made with any flavor of fruit! Check out the cherry cobbler I made last year. 




You will need: 
-1 box of yellow cake mix
-2 cans of 21 ounce pie filling (any flavor)
-1 tablespoon of vanilla extract 
-1 stick (1/2 cup) of butter
-Chopped walnuts (optional)




Pour cake mix into a large bowl. Mix in butter and vanilla. Stir well. 


Pour both cans of peaches into your crock pot OR only pour in one can if making a half batch like I did. 




Crumble dough mixture with your hands over peaches. 

Use all the dough if making a full batch with both cans of peaches. Use half the dough mixture if making a half batch with one can of peaches. Sprinkle walnuts on top. 




Cook on low for 3-4 hours or on high for 2-2 1/2 hours. Dough will not rise like cake My half batch of cobbler was done perfectly in exactly 2 hours set on high. 

Cobbler is done when the edges are crisp and the dough is golden brown.




Enjoy! Serve with vanilla ice cream.

Muffin Tin Madness...

Let's get crazy people. Muffin tins have been my go to dish lately. They provide perfect portions and easy clean up so hey why not?

Pepperoni Pizza Balls: You will need 1 can of Grands Jr Biscuits, 1 package of pepperoni (I used turkey pepperoni), shredded mozzarella, and pizza sauce for dipping.

Step 1) Spray muffin tin with cooking spray
Step 2) Use kitchen scissors to cut the biscuits into four pieces
Step 3) Cut pepperoni into small pieces
Step 4) Put 3 biscuit pieces your hand. Flatten them out a little bit.
Step 5) Put pepperoni then cheese on top of the 3 biscuits in your hand
Step 6) Place the forth biscuit pieces on top and roll all ingredients into a ball
Step 7) Place into muffin tin. I sprinkled Mrs. Dash: Garlic and Herb on top of the pizza balls


Step 8) Bake at 350 for 15-17 minutes
Step 9) Dip in warm pizza sauce



Mini Cherry Cheesecakes: You will need-Butter, Eggs, Vanilla Wafers, Cream Cheese, Sugar, Vanilla, Cherry Pie Filling, and Cupcake Liners.

Crust-I took half a box of crushed vanilla wafers and mixed them with melted butter. I started with one tablespoon of butter and added a little bit more until the crumbs would stick together. Scoop this mixture into regular sized cupcake liners and mash it down with your fingers to create the crust of the cheesecake.

Cheesecake-MAKE SURE CREAM CHEESE IS AT ROOM TEMP or it will clump. Mix 2 packages of 8 ounce cream cheese with 3/4 cup of sugar, 3 eggs, 1 tsp vanilla, a dash of lemon zest and 1 Tbsp lemon juice (I just squeezed the lemon i used for the zest) in a large mixing bowl.

Scoop the mixture on top of the crust in the lined muffin tin. Bake at 350 for 20 minutes. Once cool spoon cherry pie filling on top and cool in the fridge. Enjoy!




Chicken Pot Pies: I fell in love with these little beauties.

You will need:
  • 2 cans of Grands Jr. Biscuits
  • 1 can of Cream of Chicken Soup 
  • 2 cups of cooked diced chicken 
  • 1 cup frozen mixed veggies 
  • 1 cup shredded cheese
  • 1/2 Tablespoon of dried thyme
  • 1/2 Tablespoon of dried basil 
  • 1 teaspoon onion powder 
  • 1 teaspoon garlic salt 

Step 1) Place the Grands Jr. Biscuits into each muffin cup and mush the dough down so moves up the sides.
Step 2) In a large bowl, mix the chicken, cream of chicken soup, veggies, cheese and spices
Step 3) Evenly spoon out the mixture into each cup
Step 4) Bake at 400 for about 15 minutes

If I could turn back time...

...if I could find a way

I started pinning way before I had a blog. Here are a few things I made in my pre-blogging days. A throw back blog post. Sorry for the blurry photos. They were taken before I had a fancy thing called an iPhone.

Last year my family came to stay with us for Easter weekend. I wanted to have something nice for breakfast that I didn't have to get up and make in the morning. My littlest sister and I whipped up this yummy Buttermilk Blueberry Breakfast Cake. As my family woke up they grabbed a slice out of the fridge.  Find the easy recipe here. 



This Easter I took on a harder task, Cadbury Egg stuffed Cupcakes! I used creme, chocolate and carmel eggs and didn't label them making each cupcake a surprise. These cupcakes aren't much harder to bake than regular ones. The main difference is adding a FROZEN egg in the middle of the batter before baking. Find the full recipe here.

I tried out a twist on ravioli one night for dinner. You buy a rag of ravioli (the refrigerator kind), shallow fry them in about an inch of oil and BAM you have crispy ravioli. Best served with marina sauce and Parmesan Cheese. The best part is you can make them ahead of time and warm them in the oven at 275 until hot. Great for game day or a party. 



What a pretty meal with so many possibilities! Stuffed bell peppers are filling and easy to make. I used turkey sausage but you could use regular sausage, beef or chicken. The mixture consists of  rice, yellow bell pepper, cheese, onion and spices. Read how to make them here.
