Tis the season for everything pumpkin. For this ice cream recipe I dumped stuff in my mixer and hoped it worked. Thankfully it did.
Ingredients:
1 8 oz Whipped Cream
1 14oz can of sweetened condensed milk
15 Gingersnaps, crushed
1 3oz package of Cheesecake Pudding Mix
1 and 1/2 cans of Canned Pumpkin
5 Pumpkin Candy Corn (optional)
1 8oz block of cream cheese
Step 1) Pour condensed milk in a mixing bowl
Step 2) Mix in cream cheese
Step 3) Add cheesecake Jello
Step 4) Fold in whipped cream
Step 5) Open can of pumpkin, add a layer to the bottom of a loaf pan
Step 6) Crush a thin layer of gingersnaps on top of pumpkin layer
Step 6) Add layer of cheesecake mix on top of pumpkin/ginger snap layer
Step 7) Keep alternating all three layers
Step 8) Run a spatula around the pan to lightly mix layers. Do not over mix.
Step 9) Top with more gingersnaps and pumpkin candy corn
Step 10) Freeze overnight. If you can wait that long :)
Step 11) Enjoy!

30 Before 30
I didn't realize I was entering my last year of my 20's until I walked into work and my co-worker yelled, "how old are you?" searching for the answer it suddenly hit me that I was 29. 2-9. Thoughts like what am I doing with my life started to fill my head. To help ease the pain and honestly get my 29-year-old butt off the couch, I created a 30 things to do before I'm 30 list. Ill update this post with my adventures as I cross them off the list.
1. Donate Hair: I currently look like a Dugger daughter y'all
2. Sky Dive: I'm ringing in my 30th year by jumping out of a perfectly good plane
3. Be Published: Even if it is just in a well-known blog
4. Buy a Car and Finance it Myself: Hi working air conditioning
5. Climb Enchanted Rock: Ive always wanted to
6. Take a Cooking Class: How have I not done this yet?
7. Host Thanksgiving Dinner: I hope you're hungry
8. Vote: Ive never voted. Please don't judge me.
9. Go to a College Football Game (Not UTSA): I love the roadrunners and all but lets mix it up a bit
10. Visit Magnolia Market: Getting waco in waco.
11. Girls trip to Fredericksburg: Wine!
12. Do Something Kind for a Stranger: Pretty self explanatory
13. Be a Vegetarian for a Week: Because why not?
14. Make Sushi: Cue Samantha from the Sex in the City movie minus the nakedness
15. Road Trip: Are we there yet?
16. Write Someone a Letter: Coming soon to a mailbox near you.
17. Volunteer for ACPBR: Who doesn't want to be around pit bulls!
18. Deliver Food to the Homeless
19. Walk More: Basically get off the couch more
20. Attend an Out of State Girls Trip: Flying the friendly skies
21. Get a Tattoo: Can you hold my hand?
22. Make a Candle: Im a girl, I like candles
23. Shoot Something: Pew Pew Pew
24. Get a Blow Out: After I cut my hair
25. Create my own Signature Cocktail: *Shakes Cocktail Shaker*
26. Be a Tourist in my Own Town: Remember the Alamo

Caramel Filled Snickerdoodles
These 4 ingredient goodies are amazing! Yes, you read that right, only 4. I don't have kiddos but these are also kid friendly for a fun, yummy afternoon. Ignore my crappy iPhone photography.
You will need:
2 Cans of Crescent Rolls
1 Bag of Caramels
1 Cup Cinnamon
1 Cup Sugar
Step 1) Heat oven to 350.
Step 2) Mix your cinnamon and sugar together in a small bowl.
Step 3) Open your crescent roll cans and lay the dough flat.
Step 4) Cut the end (tail) off of the triangle of dough. Save this for later. See photo below.
Step 6) Once you have 4 of the triangle tails cut off you can smash them together to form a large triangle and place a caramel on top. The triangle in the top left corner was done this way.
Step 8) Place on baking sheet about one inch apart.
Step 9) Bake for 10-12 minutes until caramel is melted and dough is brown.
Step 10) Enjoy!
