Stuffed Poblano Peppers

Yesterday was a very rainy day in San Antonio. Making something hot and spicy just seemed to fit. So I ran into the store after work and found these beautiful green poblano peppers. I thought, yep that's what we are having for dinner. 

Ingredients: 
4 Whole Poblano Peppers 
1 Package of Taco Seasoning 
2 Cups of Shredded Cheese 
1 lb of Ground Turkey 
1 Can of Black Beans 
1 Can of Corn 
1 Clove of Garlic 
1 Cup of Salsa (Optional) 
1 Cup of Sour Cream (Optional) 

Step 1: Cut your peppers in half and remove seeds. I recommend wearing gloves. 





Step 2: Lay pepper halves on a baking sheet lined with foil. 





Step 3: Roast peppers in the oven at 350 for 15 minutes.  
Step 4: While your peppers are roasting, brown your turkey meat in a skillet.
Step 5: Once meat is brown, add taco seasoning, garlic, drained can of black beans and corn. Mix well. 




Step 5: Once peppers are done roasting grab a spoon and fill the peppers with filling mixture. You might have some filling left over. It goes great on top of salads. 
Step 6: Sprinkle filling with cheese. 
Step 7: Put peppers back in he oven and boil on high for 3 minutes. Cheese should be melted and peppers hot when done.  




Step 8: Top with salsa and sour cream. 
Step 9: Enjoy!
