Caramel Filled Snickerdoodles

These 4 ingredient goodies are amazing! Yes, you read that right, only 4. I don't have kiddos but these are also kid friendly for a fun, yummy afternoon. Ignore my crappy iPhone photography.

You will need:
2 Cans of Crescent Rolls
1 Bag of Caramels
1 Cup Cinnamon
1 Cup Sugar

Step 1) Heat oven to 350.
Step 2) Mix your cinnamon and sugar together in a small bowl.
Step 3) Open your crescent roll cans and lay the dough flat. 
Step 4) Cut the end (tail) off of the triangle of dough. Save this for later. See photo below.

Step 5) Place caramel on larger piece of dough. 

Step 6) Once you have 4 of the triangle tails cut off you can smash them together to form a large triangle and place a caramel on top. The triangle in the top left corner was done this way.

Step 7) Roll dough around caramel.
Step 8) Once the dough completely covers the caramel, roll it in cinnamon and sugar mix.

Step 8) Place on baking sheet about one inch apart.

Step 9) Bake for 10-12 minutes until caramel is melted and dough is brown.

Step 10) Enjoy!

PS: If you don't eat them all right away pop them in the microwave for about 10 seconds to melt the caramel again before serving.

Spicy Garlic Edamame

Now you don't have to go to a sushi restaurant to get great edamame. I whipped up these spicy delicious pods yesterday afternoon to snack on while watching bad Sunday afternoon TV. Don't judge my by my awful iPhone photos. 

You will need: 

Edamame (Either frozen or fresh) 

1/3 Cup Olive Oil

1 Tablespoon of Minced Garlic 

Pinch of Salt

Tony Chachere's Creole Seasoning 

Directions:

Step 1) Start by adding olive oil and garlic to a skillet and add medium heat

Step 2) When oil is sizzling add in your edamame

Step 3) Stir to coat all edamame with garlic and oil 

Step 4) Cook until edamame starts to brown but not burn

Step 5) Sprinkle on and stir in Tony Chachere's Creole seasoning to taste

Step 6) Take edamame out of pan and sprinkle salt on top

Step 7) Enjoy!

Champagne Jello Shots Topped With Pop Rocks

Looking for a sweet treat to enjoy at a party or watching football? Introducing champagne Jell-O shots topped with pop rocks. 

You will need: 

1 bottle of champagne or Pink Moscato

1 Package of Pop Rocks 

1 Box 3oz of Jello 

1 Box (4 Envelopes) of Knox Brand Gelatine  

Step 1) Mix Jello powder and 3 envelopes of gelatin powder in a bowl 

Step 2) Slowly pour one cup of boiling water into the powder mixture. Stir until gelatin is dissolved. 

Step 3) Slowly stir in 3 cups of champagne. Wait until bubbles pop after each cup. The mixture will fizz when poured in. 

Step 4) Once bubbles pop pour mixture into a container. I used a small square container and small cups.

Step 5) Let jello chill in your fridge for at least 4 hours until gelled. 

Step 6) Using a sharp knife cut jello into small squares. 

Step 7) Pour pop rocks on a small plate and dip squares into pop rocks immediately before serving. Pop rocks will start to pop when in contact with Jello. 

Step 8) Enjoy!

Stuffed Poblano Peppers

Yesterday was a very rainy day in San Antonio. Making something hot and spicy just seemed to fit. So I ran into the store after work and found these beautiful green poblano peppers. I thought, yep that's what we are having for dinner. 

Ingredients: 

4 Whole Poblano Peppers 

1 Package of Taco Seasoning 

2 Cups of Shredded Cheese 

1 lb of Ground Turkey 

1 Can of Black Beans 

1 Can of Corn 

1 Clove of Garlic 

1 Cup of Salsa (Optional) 

1 Cup of Sour Cream (Optional) 

Step 1: Cut your peppers in half and remove seeds. I recommend wearing gloves. 

Step 2: Lay pepper halves on a baking sheet lined with foil. 

Step 3: Roast peppers in the oven at 350 for 15 minutes.  

Step 4: While your peppers are roasting, brown your turkey meat in a skillet.

Step 5: Once meat is brown, add taco seasoning, garlic, drained can of black beans and corn. Mix well. 

Step 5: Once peppers are done roasting grab a spoon and fill the peppers with filling mixture. You might have some filling left over. It goes great on top of salads. 

Step 6: Sprinkle filling with cheese. 

Step 7: Put peppers back in he oven and boil on high for 3 minutes. Cheese should be melted and peppers hot when done.  

Step 8: Top with salsa and sour cream. 

Step 9: Enjoy!

Summer Fruit Salad

Need something to bring to a backyard BBQ or snack on during the day? Try this quick 4 ingredient fruit salad with a secret.

You will need: 

1 lb of Strawberries

1/2 a Pineapple 

1 pint Blueberries 

1 bunch of Grapes (optional)

1 package of JELLO Banana Cream Pudding 

You might be thinking "really, banana pudding mix?" Trust me it's amazing. 

1) Cut up all fruit and place in a large bowl.

2) Sprinkle 1 tablespoon of the dry pudding mix on the fruit.

3) Mix the powder and fruit together. The juices from the fruit will create a dressing with the mix. Add more pudding mix if you want an extra kick of flavor.
4) Enjoy!

How easy is this? My husband and I enjoyed this salad with our Sunday night dinner. It was delicious and refreshing.

BBQ Cups For Dinner

When I saw Pillsbury BBQ Cups on Tori's Blog, the sTORIbook, I knew I had to make them for dinner. They are quick, easy and husband approved.

The only changes I made was using ground turkey instead of ground beef and adding a little more BBQ sauce. Read the original recipe here. 

You will need: 

2 cans (10.2 ounces each) of Pillsbury Flaky Biscuits

1 pound of ground turkey 

1 cup of BBQ sauce 

3/4 cup (3 ounces) of cheddar cheese 

1) Preheat your oven to 375 degrees 

2) Each cup uses half a biscuit. Place a half of a biscuit in each cup and press the dough up the sides of a cup cake pan. Excuse my well seasoned pan. 

3) Brown the turkey meat in a skillet on the stove. Mix in BBQ sauce.

4) Sprinkle cheddar cheese on top of each cup.

5) Bake for 13-15 mins. Cheese should be melted and the biscuit will be golden brown.

6) Yum, enjoy!

July 4th Peach Cobbler

I had Samantha from Green Eggs and Sam, Jordan from Elizabeth Grace Blog and Ashlei over this week for dinner but didn't have much time to cook by the time I got off work. I wanted to serve a quick but delicious dessert. 

Crock pot cobbler is so easy and can be made with any flavor of fruit! Check out the cherry cobbler I made last year. 

You will need: 

-1 box of yellow cake mix

-2 cans of 21 ounce pie filling (any flavor)

-1 tablespoon of vanilla extract 

-1 stick (1/2 cup) of butter

-Chopped walnuts (optional)

Pour cake mix into a large bowl. Mix in butter and vanilla. Stir well. 

Pour both cans of peaches into your crock pot OR only pour in one can if making a half batch like I did. 

Crumble dough mixture with your hands over peaches. 

Use all the dough if making a full batch with both cans of peaches. Use half the dough mixture if making a half batch with one can of peaches. Sprinkle walnuts on top. 

Cook on low for 3-4 hours or on high for 2-2 1/2 hours. Dough will not rise like cake My half batch of cobbler was done perfectly in exactly 2 hours set on high. 

Cobbler is done when the edges are crisp and the dough is golden brown.

Enjoy! Serve with vanilla ice cream.
